Instrucciones
- Asa las verduras: Precalienta el horno a 220°C (425°F). Lava las verduras y sécalas. Coloca el pimiento rojo, la berenjena, la cebolla y los tomates en una bandeja para hornear. Rocía las verduras con un poco de aceite de oliva "Don Verde Vida", sal y pimienta. Asa las verduras en el horno durante unos 30-40 minutos, volteándolas ocasionalmente, hasta que estén tiernas y la piel del pimiento esté arrugada y dorada.
- Prepara la escalivada: Una vez que las verduras estén asadas, retíralas del horno. Deja que se enfríen lo suficiente para manipularlas. Pela el pimiento rojo y retira las semillas y el tallo. Pela la berenjena y córtala en tiras. Pela la cebolla y córtala en aros. Pela los tomates y córtalos en tiras. Coloca las verduras asadas en un tazón y mezcla suavemente. Si lo deseas, puedes rociar un poco de vinagre balsámico sobre las verduras asadas para realzar el sabor.
- Tuesta el pan: Tuesta las rebanadas de pan integral o rústico en una tostadora o en el horno hasta que estén doradas y crujientes.
- Monta las tostas: Coloca una generosa porción de la mezcla de escalivada sobre cada rebanada de pan tostado. Añade la melva desmenuzada sobre la escalivada.
- Aliña y decora: Riega cada tosta con un chorrito de aceite de oliva virgen extra "Don Verde Vida". Agrega hojas de albahaca fresca por encima para darle un toque aromático y decorativo.
- ¡Listo para servir! Sirve las tostas de escalivada y melva como un delicioso aperitivo, entrante o como parte de una comida ligera. Acompaña con una ensalada fresca si lo deseas.
